Fajitas are easy to make and great to have on hand in the freezer. This is a very yummy fajita recipe that you can use for either beef or chicken fajitas
Beef Fajitas (approximately 6 servings)
-1 lb. beef , cut into strips (you can use any type of beef here- london broil/ rump roast/ flank steak/ etc...)
-1 onion, sliced
-2 bell peppers, sliced (I like to use different colored bell peppers. It makes it prettier)
-1 teaspoon of garlic
-1/4 cup lemon juice
-2 Tablespoons oil (any type)
-1 teaspoon chili powder
-1/4 teaspoon cumin
-1/2 teaspoon salt
-1/2 teaspoon pepper
~Combine all ingredients in a ziplock bag. Seal and mush!
~To make your fajita dinner night even easier.....Place tortillas and cheese in another ziplock bag and then add the bag of the meat mixture. Freeze them together!
SERVING DIRECTION:
Thaw in the refrigerator. Saute meat mixture in a fry pan until meat is cooked through. Heat tortillas in microwave and then enjoy your fiesta!
